This week's Heartland Cook is one of many who'll be manning the grills at the Kelso Classic June 10 and 11. For the past 32 years, the Kelso Classic fastpitch softball tournament has drawn in ball fans and those hungry for good food. This year's tourney will draw in teams from Missouri, Illinois, Kansas and Colorado. All the action will draw in hundreds of spectators to take it all in.
Brian Ziegler is a member of the Knights of Columbus in Kelso. That group sells concessions for the event providing mouthwatering slow-cooked meats. All the proceeds go to charity. Among the fan favorites off the grill – pork steaks that Ziegler says you don't even need a knife and fork to enjoy, they fall right off the bone.
- 1-inch thick cut Pork Steaks
- Spice rub (Brian recommends Smokin’ Brother’s Plus the Kitchen Sink)
Generously sprinkle both sides of pork steaks with rub of your choice. Press the rub into the meat and refrigerate for at least one hour to allow the spices to sink in.
Heat grill to 250 degrees and cook for 2 – 2 ½ hours.
After 2 ½ hours, remove pork steaks from grill and wrap in aluminum foil to steam for 30- 40 minutes.
