Angie's Christmas Brunch Sausage Roll

A wonderful holiday dish! This recipe can easily be doubled. It can also be made in advance and frozen.

Christmas Brunch Sausage Roll

  • 2 pounds sausage
  • 1 cup apple, peeled and finely chopped or grated
  • 1 cup soft bread crumbs
  • 1 cup onions, chopped
  • 1/2 cup Cheddar cheese, grated
  • 1 tbsp. parsley, minced
  • 1 tsp. curry powder
  • 1 tsp. brown sugar
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 egg, slightly beaten

Preheat oven to 350 degrees. Place sausage between 2 sheets of waxed paper and roll into a "sausage sheet" of 10 x 14-inches. Combine remaining ingredients and spread evenly over the sausage. Roll carefully from the long side and place in a shallow roasting pan. Bake at 350 degrees for 1 hour.

Yield: 8 servings.
