Heartland Cooks: Robert's Macaroni & Meatballs

Robert Tripp of Jackson, Missouri says when his wife leaves town he gets creative in the kitchen.

This week’s recipe is the product of that home-alone ingenuity. Robert took his two favorite things: meatballs and macaroni and mixed them together to make a man meal fit for a king.

Ingredients:

  • 2 lbs. ground beef
  • 2 lbs. ground pork
  • 1/3 finely grated onion
  • ¼ cup Parmesan cheese
  • 1 Tablespoon minced garlic
  • 2 ½ teaspoons Italian seasoning
  • ¼ teaspoon paprika
  • 1/3 cup bread crumbs
  • 2 eggs
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • Prepared macaroni and cheese

Directions:

Preheat oven to 400 degrees.

In a large bowl, mix all ingredients (except macaroni and cheese) until well combined.

Line a cookie sheet with aluminum foil and spray with non-stick cooking spray.

Shape meatballs with hands into golf ball sized balls.

Bake 25 – 30 minutes.

Assemble dish by arranging meatballs in the bottom of a casserole dish, top with macaroni.
