Thanksgiving side dish: Spinach casserole recipe

(KFVS) - Registered dietitian Christa Hudson offers a tasty side dish you can whip up and take to your Thanksgiving gathering.

As seen on Heartland News Now at Four:

  • style="background: white;">2 pkg frozen chopped spinach, cooked and drained
  • style="background: white;">4 large eggs
  • style="background: white;">2 cups low-fat, small curd cottage cheese
  • style="background: white;">½ cup sharp shredded cheddar cheese
  • style="background: white;">¼ cup all purpose flour
  • style="background: white;">Pepper to taste
  • style="background: white;">2 tbsp Parmesan cheese (optional)

Preheat oven to 350 degrees

Mix all ingredients (except Parmesan cheese) together

Pour into greased 2 quart baking dish

Bake for 30 minutes, take out and sprinkle Parmesan cheese on top

Bake another 15 minutes or until casserole is firm in the center
