Take this side dish to your Thanksgiving gathering.

Registered dietitian Christa Hudson offers a tasty side dish you can whip up and take to your Thanksgiving gathering.
As seen on Heartland News Now at Four:
- 2 pkg frozen chopped spinach, cooked and drained
- 4 large eggs
- 2 cups low-fat, small curd cottage cheese
- ½ cup sharp shredded cheddar cheese
- ¼ cup all purpose flour
- Pepper to taste
- 2 tbsp Parmesan cheese (optional)
Preheat oven to 350 degrees
Mix all ingredients (except Parmesan cheese) together
Pour into greased 2 quart baking dish
Bake for 30 minutes, take out and sprinkle Parmesan cheese on top
Bake another 15 minutes or until casserole is firm in the center
