Heartland Cooks: Linda's Brunch Dutch Baby

JACKSON, MO (KFVS) -

Breakfast or brunch doesn’t have to be the same old bacon and eggs.

Heartland Cook Linda Gast of Jackson, Missouri mixes up a dish that’s really easy to make, but looks really fancy. “Dutch Babies” are a fluffy egg pancake that bake in a cast-iron skillet and are designed to impress without a lot of effort.

Ingredients:

  • 2/3 cup milk (room temperature)
  • ½ cup packed all-purpose flour
  • 3 large eggs (room temperature)
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 4 Tablespoons melted butter (divided)
  • Juice of ½ fresh lemon
  • 4 Tablespoons powdered sugar
  • ½ cup sliced fresh strawberries

Directions:

Preheat oven to 425 degrees.

Blend milk, flour, eggs, salt and vanilla extract until smooth.

Melt 3 Tablespoons of butter in a 10-inch cast-iron skillet until melted and bubbly. Pour batter into the middle of the skillet.

Bake in the preheated oven until golden brown, approximately 20-25 minutes. Dutch Baby will rise above skillet as they bake.

Carefully remove Dutch Baby from the skillet and place on a large plate.

Brush with 1 Tablespoon melted butter and squeeze of lemon. Sprinkle generously with powdered sugar and top with fresh strawberries.

Serves two.

Linda’s tip: You can also serve Dutch Babies with your favorite jam or preserves instead of fresh strawberries. This dish is also great with blueberries and a bit of maple syrup. Make individual servings with 6 to 8-inch skillets.
