CAPE GIRARDEAU, MO (KFVS) - This week's Heartland Cook comes from within the KFVS family. When Breakfast Show anchor Crystal Britt isn't on the news, she and her daughter, 10-year-old Sydney, love to whip things up together in the kitchen. While most 10-year-olds don't like spicy foods, Sydney loves it! With a little help from mom and little sister Makenzie, Sydney shares one of her favorite recipes: spicy salsa.
- 1 onion
- 1 jalapeno or Serrano pepper (seeds removed)
- 2 cloves garlic
- 1 can whole peeled tomatoes (or fresh when in season)
- 2 cans rotel
- Juice of one lime
- Shake of hot sauce
- Handful of fresh cilantro leaves
- Salt and pepper (to taste)
Rough cut onion, and two cloves of garlic. Remove seeds from Serrano or jalapeno. Add to food processor and chop.
Drain canned tomatoes and add to food processor along with Rotel, the juice from one lime, hot sauce, cilantro leaves and salt and pepper to taste. Blend all together in food processor and enjoy with chips.
Crystal's tip: We've also tried this recipe with grilled or roasted veggies, and a shake or two of cumin. It adds a totally different depth of flavor if you enjoy a smoky salsa.
