CAPE GIRARDEAU, MO (KFVS) - We're nearing the end of the list on our 12 Treats of Christmas with #11 – a dainty cookie from Sarah Ross of Cape Girardeau. Sarah's Cardamom Cookies have a unique flavor that's spiced just right for the holidays.
- 2 cups Butter (softened)
- 2 ½ cups Powdered Sugar (divided)
- 1 ½ teaspoons Almond Extract
- 3 ¾ cups All-Purpose Flour
- 1 teaspoon ground Cardamom
- 1/8 teaspoon Salt
- 1 cup finely chopped Walnuts
Preheat oven to 350 degrees.
In a large mixing bowl, cream butter and 1 ½ cups powdered sugar together until smooth. Beat in almond extract.
In a separate bowl, combine flour, cardamom and salt. Gradually add dry ingredients to the creamed mixture. Stir in walnuts.
Roll dough into 1-inch balls. Place two inches apart on ungreased baking sheets. Bake 15-17 minutes or until edges are golden. Roll warm cookies in remaining powdered sugar.
Cool on wire racks.
