12 Treats of Christmas #11 - Sarah's Christmas Cardamom Cookies

We're nearing the end of the list on our 12 Treats of Christmas with #11 – a dainty cookie from Sarah Ross of Cape Girardeau. Sarah's Cardamom Cookies have a unique flavor that's spiced just right for the holidays.

Ingredients:

  • 2 cups Butter (softened)
  • 2 ½ cups Powdered Sugar (divided)
  • 1 ½ teaspoons Almond Extract
  • 3 ¾ cups All-Purpose Flour
  • 1 teaspoon ground Cardamom
  • 1/8 teaspoon Salt
  • 1 cup finely chopped Walnuts

Directions:

Preheat oven to 350 degrees.

In a large mixing bowl, cream butter and 1 ½ cups powdered sugar together until smooth. Beat in almond extract.

In a separate bowl, combine flour, cardamom and salt. Gradually add dry ingredients to the creamed mixture. Stir in walnuts.

Roll dough into 1-inch balls. Place two inches apart on ungreased baking sheets. Bake 15-17 minutes or until edges are golden. Roll warm cookies in remaining powdered sugar.

Cool on wire racks.

Recipe makes 6 dozen Cardamom Cookies.
