Pat's Scandinavian Almond Bars

CAPE GIRARDEAU, MO (KFVS) -

Pat Brase of Cape Girardeau make scrumptious Scandinavian Almond Bars. They're delicate pastries with a strong almond flavor your family is sure to love.

Ingredients:

Pastry

  • ½ cup Butter (softened)
  • 1 cup Sugar
  • 1 Egg
  • ½ teaspoon Almond Extract
  • 1 ¾ cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • ¼ teaspoon salt
  • 1 Tablespoon Milk
  • ½ cup sliced Almonds

Icing

  • 1 cup Powdered Sugar
  • ¼ teaspoon Almond Extract
  • 1 to 2 Tablespoons Milk

Directions:

Preheat oven to 325 degrees.

In a large mixing bowl, cream together butter and sugar. Beat in egg and almond extract.

Combine all dry ingredients in a separate bowl and then add to creamed mixture a little at a time, mixing well.

Divide dough into fourths. Form each fourth into a 12 x 3 inch rectangles. Place rectangles at least 5 inches apart on greased baking sheets. Brush with milk and sprinkle with almonds.

Bake 18 – 20 minutes or until firm to the touch and edges are lightly browned. Cool on pans for 5 minutes then cut diagonally in 1-inch slices.

Remove slices to wire rack to cool completely.

Combine all ingredients for icing and drizzle over cooled bars.

Recipe makes four dozen Almond Bars.
