CAPE GIRARDEAU, MO (KFVS) - Sarah Ross of Cape Girardeau continues toward our goal of 12 Treats of Christmas with #8 – Pecan Tassies. These tiny treats are similar to a pecan pie, but fit in the palm of your hand. Dusted with powdered sugar they're a very pretty addition to your Christmas cookie collection.
- ½ cup butter, softened
- 3 ounces cream cheese (softened)
- 1 cup all-purpose flour
- 1 egg (lightly beaten)
- ¾ cup packed brown sugar
- 1 tablespoon butter (melted)
- ½ cup coarsely chopped pecans
- Powdered sugar (optional)
Preheat oven to 325 degrees.
Pastry: In a medium bowl, beat together the ½ cup butter and the cream cheese until combined. Stir in flour. Form pastry dough roughly 1 teaspoon at a time into small balls, and press each ball evenly into the bottoms and up the sides of 24 ungreased 1 ¾ inch muffin cups.
Pecan filling: In a small bowl, combine egg, brown sugar and 1 Tablespoon melted butter. Stir in pecans.
Assemble: Spoon 1 heaping teaspoon of the filling into each pastry-lined muffin cup.
Bake: 25 to 30 minutes or until pastry is golden brown and filling is puffed.
Cool slightly in pan, then carefully remove Pecan Tassies from muffin cups to cool completely on a wire rack.
If desired, sprinkle cookies with powdered sugar.
