12 Treats of Christmas #4 - Sarah's Superb English Toffee

CAPE GIRARDEAU, MO (KFVS) -

Christmas is just a couple weeks away and this week's recipe is what gets Heartland Cook Sarah Ross in the Christmas spirit. Sarah Ross of Cape Girardeau said she starts making her first batch of Superb English Toffee the day after Thanksgiving and makes more all the way up through Christmas. Her friends, family and co-workers have all come to expect the melt-in-your-mouth Christmas candy in their stockings!

Ingredients:

  • 2 cups chopped pecans
  • 1 cup butter
  • ½ cup brown sugar
  • Chocolate Chips

Directions:

Grease a rimmed cookie sheet. Spread chopped pecans on the bottom of the cookie sheet. Bring butter and brown sugar to a boil. Once mixture is boiling, set a timer for exactly seven minutes. Pour mixture over nuts.

While the toffee is still hot, drop chocolate chips over the top. When chocolate begins to melt, use a knife or spatula to spread it evenly across the span of the toffee.

Refrigerate toffee until cool and hard. Break into pieces and enjoy!
