Clara Essner of Kelso, Missouri continues our 12 Treats of Christmas series with her recipe for Peanut Butter Fudge. As Clara says – you can't go wrong with peanut butter!
- 2 cups sugar
- 2/3 cup milk
- 7 ounces Marshmallow Creme
- 1 cup creamy peanut butter
- 1 teaspoon vanilla
Mix sugar and milk in saucepan. Boil mixture until candy thermometer reads 235-240ºF, or to softball stage.
Remove from heat; add vanilla, marshmallow crème and peanut butter. Mix well and pour into a buttered 6 x 10 pan. Cool, cut into 2 inch squares.
Recipe makes two pounds of fudge.
