JACKSON, MO (KFVS) - This week's Heartland Cook spends most of her time investigating crime in and around Jackson, Missouri. Detective Megan Keith's job doesn't take a break for the holidays, so she and her fellow officers frequently find themselves spending Thanksgiving in the break room of Jackson Police Department.
Detective Keith shares her recipe for Cornbread Casserole, a quick and easy recipe that she released in a cookbook put together by the department as a fundraiser for Relay for Life. "Cooking with Cops" is chock full of easy recipes that can be whipped up quickly between emergency calls, or for your busy family on a work and school night.
Detective Keith's Cornbread Casserole was a hit with the Jackson PD, and is sure to have your family investigating the possibility of a second helping.
- 1 box corn muffin mix
- 1 can whole kernel corn (drained)
- 1 can creamed corn
- 1 stick of butter (melted)
- 2 eggs (slightly beaten)
- 1 cup sour cream
- 1 – 1 ½ cups shredded cheddar cheese
Preheat oven to 350 degrees.
Mix all ingredients in a medium bowl. Pour mixture into a greased 8 x 8 baking dish.
Bake for one hour.
