SIKESTON, MO (KFVS) - No tricks here, this week's Heartland Cook makes his own treats. Eleven-year-old Vincent Klueppel plans to be a ghost this Halloween, but certainly won't be invisible in his mom's kitchen. Vincent says he loves to cook. Among his specialties: eggs, grilled cheese and this week's recipe – Pumpkin Spice Ice “Scream”. The homemade ice cream is a yummy snack he says he'll look forward to after he makes the rounds in Sikeston with his friends trick-or-treating.
- 1 1/4 cup heavy cream
- 1 can sweetened condensed milk
- 1/2 cup sugar
- 1 Tablespoon vanilla
- 2 Tablespoons dry pumpkin spice pudding mix
- 1 teaspoon pumpkin pie spice
- 2 Tablespoon of 100% canned pumpkin
- 10 (or so) butter cookies
In a medium sized bowl, combine heavy whipping cream, sweetened condensed milk, sugar, vanilla, dry pumpkin spice pudding mix, pumpkin pie spice and 100% canned pumpkin. Mix well and pour mixture into an ice cream maker. Allow ice cream to churn for a few minutes. As it begins to thicken, crush butter cookies and add crumbles to churning ice cream.
Allow ice cream to churn for several additional minutes until thickened to desired consistency.
