CAPE GIRARDEAU, MO (KFVS) - Deer season is upon us! That means Heartland freezers will soon be filled with venison from this year's harvest. This week's Heartland Cook is an avid hunter and cook. Zac Caldwell of Cape Girardeau shares a great recipe that bakes up a flavorful venison snack or main dish.
- 1 lb. venison tenderloin
- 1 cup Italian dressing
- 1 ½ cups Italian bread crumbs
- ½ cup Parmesan-Romano blend cheese
- ¼ cup fresh chopped parsley
- Salt & pepper
- 1 lemon (sliced)
Cut venison tenderloin into 1 inch squares. Add venison to bowl of Italian dressing and refrigerate for at least one hour. (Zac suggests allowing it to marinate overnight).
Pre-heat oven to broil. Spray a cookie sheet or large baking pan with non-stick cooking spray.
Mix bread crumbs, parsley and parmesan-Romano cheese in medium bowl. Toss venison bites individually in breading until each is well coated.
Place each venison bite 1 inch apart on baking sheet.
Broil 3 minutes on each side until golden brown.
Lightly dust venison bite with salt and pepper. Squeeze fresh lemon on top.
Serve and enjoy!
