Chef Jeff - Chicken and Rice Soup Oct. 21

Ingredients:

  • roasted chicken
  • chicken broth
  • brown rice
  • olive oil
  • white onion
  • celery
  • cracked pepper
  • diced carrots
  • green beans
  • peas
  • fresh Italian parsley
  • kosher salt

Today on "In the Kitchen" with Chef Jeff, it's all about the chicken and rice soup.

This is a tip right here for you busy families, you can prep everything in advance. I'm going to add a little bit of olive oil, a tablespoon of white onion, a tablespoon of celery.

I'm going to add a little bit of cracked pepper, a third cup of carrots, a third of a cup of green beans, brown rice, two cups of chicken broth.

I want this soup simmering. Then, about a teaspoon of kosher salt. I'm going to add some premium garden peas, and now I'm going to add the chicken.

This is a great soup for that chilly weather in the fall. I'm going to add a little bit of fresh parsley.
