Heartland Cooks 5/12 - Mother's Day Breakfast

CAPE GIRARDEAU, MO (KFVS) -

This Mother's Day on Heartland Cooks we share recipes from two moms near and dear to Jaime's heart. First, Jaime's mom Debbie Travers; second her soon-to-be mother-in-law Chris Czepulkowski. Debbie's Eggs Whitaker is a favorite in the Travers household; perfect for surprising mom with breakfast in bed. Chris's Apples & Pork Sausage combines salty and sweet flavors for a fantastic side dish for any Mother's Day brunch.

Debbie's Eggs Whitaker

Ingredients:

  • 4 slices of bread
  • 6 eggs
  • 1 & 3/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon dry mustard
  • Diced ham
  • Chopped green onions
  • Shredded cheddar cheese

Directions:

Cut the crust off four slices of bread. Butter both sides of the bread and place the slices flat on the bottom of an 8 x 8 pan.

Next, add layers of diced ham, chopped green onions and shredded cheddar cheese on top of the bread. There's no specific amount of each, just use as much ham, cheese and green onion as you'd like.

Beat together eggs, milk, salt, pepper and dry mustard. Pour the mixture in the pan on top of previous ingredients.

Cover the pan with aluminum foil and refrigerate overnight.

In the morning, pre-heat your oven to 350 degrees and cook for 45 minutes, or until the knife comes out clean.

Chris's Apples & Pork Sausage

Ingredients:

  • 1 package pork sausage links
  • 6 to 8 apples (cored, peeled, cut into wedges)
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • Pinch of nutmeg
  • 2 Tablespoons butter (cubed)

Directions:

Preheat oven to 350 degrees.

In a skillet, brown the sausage links.

In a small bowl, combine brown sugar, cinnamon and nutmeg. Stir mixture into apples and toss until all apples are coated. Pour apples in greased 9 x 13 baking dish.

Dot cubed butter over apples, and top with browned sausage links.

Cook 30 min or until apples are tender.
