CAPE GIRARDEAU, MO (KFVS) - This week's Heartland Cook is from the KFVS family. You may remember Christy (Hendricks) Russell from her reporting a few years back. Now she's mainly behind the scenes working as our Digital Content Director making sure kfvs12.com always has the most up-to-date information.
Lemon bars rank very high on her list of favorite snacks, but she tried something different with one batch that created a new favorite.
"I love lemon bars, so I tried making key lime bars for a twist," said Christy. "They were a hit at my house!"
We're sure they'll be a hit on your table too!
- 1 cup butter, softened slightly
- 1/2 cup powdered sugar
- 2 cups flour
- 4 eggs, beaten
- 2 cups sugar
- 6 tablespoons key lime juice
- 4 tablespoons flour
- 1 pinch salt
- 1 teaspoon baking powder
Preheat oven to 350 degrees.
Crust: mix butter, powdered sugar and two cups of flour. Lightly grease bottom and sides of 9 X 12 inch baking pan, or spray with non-stick cooking spray. Pat the dough into bottom of pan. Bake crust for 20 minutes.
Filling: As you're waiting for the crust to bake, beat together the eggs, sugar and lime juice. Add and mix four tablespoons of flour, salt and baking powder.
Pour filling onto crust. Bake at for an additional 25 minutes. Sprinkle powdered sugar on top and cut into bars.
