CAPE GIRARDEAU, MO (KFVS) - This week's Heartland Cook comes from Bell City, Missouri. Mark Hairston says he and his kids are in the mood for breakfast food anytime, day or night. He says they really enjoy biscuits and gravy with bacon, sausage, or ham. Mark makes his gravy a little different. He says his no-fail biscuits and chocolate gravy are great for getting sleepy heads out of bed!

Mark's Chocolate Gravy


  • 2 cups milk
  • 1 cup sugar
  • 1/3 cup flour
  • 3 Tablespoons cocoa powder


In a medium saucepan, slowly heat the milk. While that's warming up, mix the sugar, flour, and three heaping tablespoons of cocoa in a bowl until it's a fine brown mixture with no clumps.

When you see the first bubble in the milk indicating a low boil, add the cocoa mixture and don't stop stirring. At this point, turn down the heat. When it starts to thicken, turn off the heat completely and keep stirring until it's the consistency of gravy.

Mark's No Fail Biscuits


  • 2 cups all purpose flour
  • 4 teaspoons baking powder
  • 1 stick butter (softened)
  • 1 egg
  • ¾ cup milk


Mix flour and baking powder. Combine dry ingredients with softened butter until it is crumbly. Add egg and milk. Stir until well moistened. Drop dough in heaps on lightly oiled cookie sheet and bake at 350 degrees for 20-25 minutes or until golden brown.

Pour the chocolate gravy over the biscuits and enjoy!
